The Arcane Collective, helmed by culinary visionaries Shane Osborn, Michael Smith, and Didier Yang, has brought a vibrant slice of Australian dining culture to Central with the launch of Servo. Relocated from Landmark, Servo offers an effortless and approachable dining experience inspired by Australia’s iconic “servo” pit stops—places to refuel with great food and warm hospitality.
Servo is a top pick for a bite in Central, offering something for every time of day. Start your morning with breakfast favorites like the smashed avocado on sourdough with chilli jam or the indulgent bacon butty with HP sauce (perfect for THOSE types of mornings!), paired with expertly brewed Australian-style coffee. For lunch, highlights include the flaky, spice-kissed homemade sausage roll with kasundi or the refreshing nicoise salad with yellowfin tuna.
As the day winds down, Servo transforms into a social hub, serving shareable plates like the charcuterie board, cheese board, and hearty dishes such as the comforting homemade “Chook” pie for two. These pair perfectly with the curated selection of Australian wines, craft beers, and non-alcoholic options.
